Organization in Cooking II

This is one of our favorite go-to meals!!

It starts with toast; add avocado and egg - and the rest is up to you!!

I found this recipe from SkinnyTaste. It has great photos and a recipe with a picture that is perfect to print.  Her recipe is going in my "Go-to" recipe binder!!

One change we have made is:

  • we use 1/2 avocado per piece of toast.  She uses 1/4 avocado.

Some of our favorite modifications are:

  • put a small amount (so it doesn't overpower the other flavors) of dijon mustard on the toast before putting on the avocado
  • put thin slices of cucumbers on the avocado before putting the egg on top
  • top with the cheese of your choice, putting it under the broiler till melted.

As I said, "the rest is up to you", and as you can see from this photo, the sky is the limit with this recipe.  I think you will love these versions also.
