This is one of our favorite go-to meals!!
It starts with toast; add avocado and egg - and the rest is up to you!!
One change we have made is:
- we use 1/2 avocado per piece of toast. She uses 1/4 avocado.
Some of our favorite modifications are:
- put a small amount (so it doesn't overpower the other flavors) of dijon mustard on the toast before putting on the avocado
- put thin slices of cucumbers on the avocado before putting the egg on top
- top with the cheese of your choice, putting it under the broiler till melted.
As I said, "the rest is up to you", and as you can see from this photo, the sky is the limit with this recipe. I think you will love these versions also.
