Do You Love Pesto? It's So Easy To Make!!

It's time to start planning what you will plant in your garden.  

Can I make a suggestion?  Plant basil!!

Every year we plant 2 basil plants.  We love all the light summer meals we can make with fresh basil. I will share some of those with you this summer.  But one of our favorite things to do with all those beautiful basil leaves is make Pesto, which is one of the simplest things to make and you are grateful you made it throughout the entire year because of the simple and easy meals you can make with it!!

You just put all the ingredients in a food processor and give those blades some pulses!!

This recipe is from my son-in-law who spent 2 years in Italy and learned to cook from Mama Rosa!  It doesn't get better than that!!

 Pesto

 2 c. lightly packed basil leaves                                                                                                        

 4 cloves of garlic or 2 tsp. from a jar (I use the jar because I am making a lot to freeze)            

 2 tsp. kosher salt                                                                                                                              

 1 1/4 cups walnuts*                                                                                                                            

 1 1/4 cups extra virgin olive oil                                                                                                            

 1 cup grated parmesan cheese                                                                                                          

* A lot of recipes call for pine nuts, but they are a lot more expensive and we have found  walnuts work just as well.

Put everything in a food processor, lock on the lid, and pulse until it is a consistency you like.  We don't like it an entirely smooth consistency.  We leave it a little on the course side.              

 3/4 cup of pesto will do 1 lb. of noodles

 

THAT IS IT!!

I have sandwich bags ready and my measuring cup and put 3/4 cup in each bag; lay the bags flat so they freeze flat, and put them in a container or gallon freezer bag and freeze them for when I need a quick and delicious meal.

Here are some recipe ideas:

Our favorite meal with pesto is to roast pine nuts ( I always roast 2 to 3 times more than what I think I will need and freeze any leftover pine nuts in a sandwich bag for the next time I need them.) in the oven-375 degrees for 5 - 10 minutes, stirring once or twice, while your pasta is cooking. Stir the cooked and drained pasta and pesto together; add the roasted pine nuts, top with grated parmesan cheese and dinner is ready.  Add salad and garlic bread

This is another one of our favorite recipes using pesto.  It is another easy and delicious one that can be put together at the last minute!!  A great go-to recipe!!
