I am grateful for stopping and reflecting on the meaning of this holiday!! I admit that every day and week fly by so quickly that I might not have paused to feel a deep gratitude for the selfless sacrifice of so many heroes!! I just finished reading about what it was like to live in East Berlin after the wall went up, and I know I can not take our freedoms for granted. While you are celebrating this 3-day weekend, I hope you will also express deep felt gratitude for living in the land of the free BECAUSE of the BRAVE!!!

3 Ingredient Pulled Pork
1 - (2 lb) pork tenderloin (pork shoulder or butt can also be used)
1 - can (12 oz) root beer
1 - bottle (18 oz) barbecue sauce
8 - hamburger buns

slow cooker bacon brown sugar baked beans
3 cans (28 oz each) baked beans, drained
8 slices bacon, crisply cooked, crumbled (1/2 cup) SAVE $
1 large sweet onion, chopped (1 1/2 cups)
2/3 cup packed brown sugar
1/2 cup ketchup
2 tablespoons Dijon mustard
1 tablespoon cider vinegar
2 teaspoons Worcestershire sauce

Berry Watermelon Fruit Salad
- 4 cups watermelon, cubed
- 1 pint strawberries, hulled and quartered
- 1 pint blueberries
- 1 pint raspberries
- 1 pint cherries, pitted and halved
- 1/2 pint blackberries
- squeeze of fresh lime juice

Oil and Vinegar Coleslaw
Because you can't have pulled pork without coleslaw!!
This is our favorite oil and vinegar coleslaw recipe. Hope you like it!!
- 1 medium head cabbage, shredded - (We use a 1 lb bag of shredded cabbage mix instead.)
- 1 carrot- (Included in the bag of cabbage.)
- 1/4 onion, chopped
- 1/4 cup vegetable oil
- 1/4 cup vinegar
- 1/4 cup white sugar
- Salt and pepper to taste (the recipe does not include this)
